Smoked Salmon Linguine

The perfect springtime supper dish - so quick and easy.

A great source of omega 3 and 6 to nourish your family.

Serves 4

  • 200g linguine
  • Butter, for frying
  • 2 garlic cloves, crushed
  • 350ml pot creme fraiche
  • Zest of 1 large lemon
  • 50g fresh Parmesan, grated
  • 200g sliced smoked salmon, cut into strips
  • A handful of wild rocket leaves, to serve (optional)

Cook the linguine in boiling water until tender. Meanwhile, melt a little butter in a pan and cook the garlic until softened. Add the creme fraiche, lemon zest and parmesan. Cook for 1 minute and remove from the heat.

Drain the pasta and toss with the sauce and smoked salmon. Divide between 4 bowls and garnish with the rocket to serve, if you like.

For a variation on this recipe, bake fresh salmon in the oven and add this instead of the smoked salmon before serving.

Do you know what pasta is made with? We are so used to just pouring dried pasta from a packet, which is great, but did you know that it is made from flour and eggs so is a great source of carbohydrate which gives us energy to run and play.
